You would think that, because of the beautiful red flowers, Pohutukawa honey would also have a dark hue to it. The colour of caramel, perhaps. The reality is that if you look deep enough into the flower, the colour of the nectar is naturally light. This is the pollen that bees feed on, rather than the red ‘petals’.
